Union Jacks_01 UJ_01 One challenge for Blacksheep was to design within a space enclosed by floor-to-ceiling glass that could not be covered.

Union Jacks_02 UJ_02 Food prep and ovens are at the center of the space and, along with the Union Jacks neon sign above the counter, the cooking activity is visible from the outside.

Union Jacks_03 UJ_03 The British flats, made of fresh ingredients and baked in wood-fired ovens, are not the usual Italian-influenced pizzas.  For example, a flat named Old Spot features roast shoulder of pig, quince and Bramley sauce, Cropwell Bishop Stilton, crackling, and watercress.

Union Jacks_04 UJ_04 Booths and simple wood-and-metal tables and chairs adorn the lower level dining area.

Union Jacks_05 UJ_05 In the lower level pegboard walls hold old televisions that display live views of the food prep area.

Union Jacks_06 UJ_06 Signage above the counter is reminiscent of that found in diners or movie theaters from the 1950s or 1960s, and stools are similar to those from a school science lab.  The overall look is a retro interpretation, conjuring memories of a previous time or place but not a specific year.
